It is a robust tree up to 10 m tall, evergreen and dark green. It belongs to the legume family, Fabaceae. Its leaves are oval and its flowers are small.

The fruits it produces are like dried legumes and are known as carob pods. The seeds inside are used to feed livestock, although they are also used in powdered or syrup form as an ingredient in cakes and biscuits, sometimes being used as a substitute for chocolate.
